Cilantro Lime Shrimp Skewers

What’s a better way to end the summer than with cilantro lime shrimp skewers? They're super quick to make and adds the perfect flair to any cookout! This recipe is perfect for meal prep, a tex-mex night, to top on a salad or to pair with mango pico. The shrimp can be made on skewers or without. Happy cooking!

Yield: 4-6 servings


Supplies:

  • Paper towel

  • Medium-large mixing bowl

  • Non-stick pan

  • Paring knife

  • Metal or bamboo skewers

Ingredients:

  • 1 pound medium shrimp (41/50), deveined, shell on

  • 2 limes

  • Handful cilantro

  • Garlic powder

  • Sea salt

  • Black pepper

  • Avocado, grapeseed, or preferred cooking oil


  1. Wash Shrimp- Begin by washing shrimp and patting them dry. Transfer shrimp to mixing bowl.

  2. Season Shrimp- Squeeze the juice of 1 lime over shrimp. Next, season with salt, black pepper, and garlic powder to taste, ensuring that all shrimp are seasoned.

  3. Add Shrimp to Skewers- (optional) Place 5-6 shrimp on skewers.Pierce shrimp towards the middle. Do so gently so shrimp does not tear.

  4. Grill Shrimp- Place pan or non-stick grill on medium heat and lightly coat with cooking oil. Sear on each side for about 3 minutes until shrimp is no longer translucent.

  5. Garnish- After removing shrimp from heat, garnish with cilantro and serve with lime wedges.
