The perfect plant-based appetizer on a summer day, this quick and easy to make grilled okra with jalapeño ranch will leave your crowd impressed and wanting more and more. This recipe was crafted for the first week of the Farm to Plate series with Sankofa Farms. Yield: 4 servings
1 lb fresh okra
1 tsp tarragon
Avocado or grapeseed oil
Blender or food processor
Citrus juicer (optional)
1 handful cilantro
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 cup sour cream or plain greek yogurt
Wash and Cut Okra- Begin by washing okra in cold water then drying using a kitchen towel or paper towels. Cut the tops of each pod.
Season Okra- Next, add cut okra to a bowl and drizzle about 1 tbsp of avocado oil and ensure each piece is lightly coated. Season with salt and pepper to taste and 1 tsp dried tarragon.
Grill Okra- Finally, grease grill pan and place on medium-high heat. Grill okra on each side for 2-3 minutes until browned.
Serve- Serve with Jalapeno Ranch. Enjoy!
Prep Sauce- Next, juice 2 tsp lime juice. Then, seed and roughly chop jalapeno. Destem and roughly chop a handful of cilantro. Add ingredients to the food processor. Also, add salt, onion powder, garlic powder, and sour cream.
Blend Ranch- Combine in a food processor or blender until smooth.
