Mango Pico

It’s a party with every bite! This recipe can be made in under 20 minutes and goes perfectly with cilantro lime shrimp skewers, grilled chicken, your favorite burrito bowl, taco salad...the list really goes on! Happy slicing and dicing!

Yield: 4-6 servings



Supplies:

  • Medium-large mixing bowl

  • Paring knife

  • Spoon

Ingredients:

  • 1 red bell pepper

  • 1 red onion

  • 1 jalapeno

  • 1 1/2 medium mangos

  • ½ lime

  • Handful cilantro

  • Kosher salt



  1. Wash Produce- Begin by washing produce and patting dry.

  2. Slice and Dice- Begin by finely dicing mango. Using a spoon, place 1 ½ c mango into bowl. Next, slice jalapeno in half lengthwise. Using a spoon, remove seeds from half of the pepper (keep a few if you like spice) and finely dice. Place into bowl. Next, finely dice ⅓ c bell pepper and add to bowl. Finally, finely dice ⅓ c red onion and add to bowl.

  3. Mix and Season- Squeeze juice of ½ lime into mango, bell pepper, jalapeno and onion mixture. Combine using a spoon. Next, destem handful of cilantro and finely chop. Add cilantro to mixture. Finally, season with ¼ tsp kosher salt. Mix again.

  4. Serve- Serve with cilantro lime shrimp, tortilla chips or with your favorite burrito bowl. Keep tightly sealed in fridge for up to 3 days.
