Mediterranean Chickpea Salad

I absolutely love mediterranean cuisine. The freshness of the ingredients, the herby spices, and its refreshing taste excites me (and my tastebuds). This chickpea salad draws from those flavors. It’s super easy to make and great for the days when you want something healthy and delicious, but don’t want to spend too much time in the kitchen. It can be served over a bed of mixed greens or eaten alone. Also, feel free to spice it up how you’d could add some quinoa and make it a grain bowl; add some more protein with grilled chicken, chicken, or steak. You could even switch the herbs out and add some sliced avocado. Also note, fi you don't have dried basil and oregano, replace them with Italian seasoning. Happy cooking, foodies!
