Southern Braised Kale

Yield: 2-4 servings


Supplies:

  • Colander

  • Large pan or wok

  • Paring knife

  • Chef’s Knife

  • Cutting board

  • Garlic mincer (optional)

  • Measuring spoons

  • Measuring cup

Ingredients:

  • 1 pound curly kale

  • 6 cloves of garlic

  • ½ medium sweet yellow onion

  • Smoked turkey wing

  • ½ tsp cayenne pepper

  • ½ c chicken broth

  • ¼ c apple cider vinegar

  • 1 ½ tsp maple syrup

  • Avocado or grapeseed oil




  1. Prep- Begin by washing and drying kale, then cutting into bite size pieces. Place kale into a bowl. Next, thinly slice onion and mince garlic cloves and placing them into the same bowl. Next, take meat off of the turkey wing, then roughly chop it. Place turkey into the same bowl.

  2. Saute Aromatics and Turkey- In a pan on medium heat, add about 1 tbsp of cooking oil. Next, add cayenne pepper to oil. Then, add onions and turkey. Saute for about 3 minutes until fragrant, then add garlic. Let garlic cook for about 1 minute, ensuring that it doesn’t burn in pan.

  3. Add Broth, Vinegar, and Kale- Next, add chicken broth and apple cider vinegar. Allow liquid to come to a boil, then add kale. Cover pan and reduce heat to a simmer. Simmer for 25 minutes.

  4. Add Syrup- Once kale has simmered, add syrup and stir. Serve.
