Grilled Peach Summer Salad

Ingredients:

  • 2 peaches, pitted and sliced into 1/2 inch pieces

  • Beautiful Briny Sea- Friends Forever Salt- Honey Infused Salt

  • 4 cups Arugula

  • Champagne Vinegar

  • Balsamic Glaze

  • Honey

  • Olive Oil

  • Avocado Oil

  • Pepper

  • 15-20 Mint leaves

  • Buratta, Feta, Goat Cheese, or Blue Cheese

  • 1 cup Blueberries, Blackberries, and/or quartered Strawberries

  1. Season Peaches- Pat peach slices dry with a paper towel. Next drizzle peaches with 3 tbsp honey, 2 tbsp avocado oil and toss. Lightly season peaches with Friends Forever Salt.

  2. Grill Peaches- Place a grill pan (cast-iron preferred) on medium heat. Next, place peaches on grill pan and cook on each side for about 6 minutes or until grill marks appear.

  3. Dress Greens- Place arugula and mint in a bowl and lightly drizzle olive oil and champagne vinegar. Next, toss and season with Friends Forever Salt and Pepper. Next, add berries to greens and toss.

  4. Plate and Serve- On a serving platter, add dressed greens. Top with buratta or cheese of choice. Next, top with grilled peaches. Drizzle with balsamic glaze and serve.
