Pickled Onions

  • 1 large red onion, thinly sliced

  • 5 cup boiling water

  • Apple cider vinegar

  • 2 tbsp honey

  • 1 tsp kosher salt

  • 1 tsp peppercorns

  • 1 bay leaf

  1. Rinse Onions- Begin by placing onions into a sieve. Rinse with 3 cups of boiling water, then transfer to mason jar.

  2. Add ingredients- Add 1 part boiling water and 1 part apple cider vinegar into the mason jar. Next, add honey, salt, pepper, and bay leaf. Close and shake to combine ingredients.

  3. Cool- Let onions cool on the counter for 30 minutes. Once pickled serve with avocado toast, cilantro lime shrimp tacos, burgers, or any other meal you’d like! Refrigerate for up to 3 weeks.
