Pickled Onions
- 1 large red onion, thinly sliced 
- 5 cup boiling water 
- Apple cider vinegar 
- 2 tbsp honey 
- 1 tsp kosher salt 
- 1 tsp peppercorns 
- 1 bay leaf 
- Rinse Onions- Begin by placing onions into a sieve. Rinse with 3 cups of boiling water, then transfer to mason jar. 
- Add ingredients- Add 1 part boiling water and 1 part apple cider vinegar into the mason jar. Next, add honey, salt, pepper, and bay leaf. Close and shake to combine ingredients. 
- Cool- Let onions cool on the counter for 30 minutes. Once pickled serve with avocado toast, cilantro lime shrimp tacos, burgers, or any other meal you’d like! Refrigerate for up to 3 weeks.
