Breakfast Casserole

Ingredients:

  • ⅓ c sweet yellow onion, diced

  • ⅓ c sweet mini peppers, diced

  • ½ tsp crushed red pepper

  • 1 tbsp fresh parsley, chopped

  • Black pepper

  • Fine sea salt

  • 8 large eggs

  • ¼ c heavy cream

  • 1 ⅓ c sharp cheddar cheese, freshly grated, separated

  • 2 tbsp unsalted butter

  • ⅔ c breakfast meat of choice, chopped

  1. Cook Protein: Preheat oven to 375° F. In a medium nonstick pan, cook breakfast meat to your liking, then remove from pan and place into large mixing bowl.

  2. Saute Peppers and Onions: Next, add 1 tbsp butter to pan, if necessary, then add crushed red pepper. Saute for a minute, then add onions and peppers. Sweat for about 5 minutes until fragrant, then transfer to bowl.

  3. Prep Eggs: Next, crack 8 eggs into bowl. Beat eggs until yolks and whites are combined well. Next, add heavy cream, parsley, ⅔ c cheese, and season with salt and pepper to taste. Butter medium casserole dish, then transfer egg mixture. Next, top with the remaining ⅔ c cheese.

  4. Bake: Bake for 25 minutes or until eggs are set, then serve immediately.
